Tip of the day: Always have a healthy dessert like these PB+J Cups stashed in the freezer for when that sweet tooth calls! This tasty recipe is full of gut-loving chia seeds, protein-rich peanut butter, nourishing coconut oil, fresh strawberries and is naturally sweetened with a touch of maple. Plus, we added beetroot powder for extra antioxidants and a gorgeous deep pink hue!

Strawberry Chia Jam Bottom


Peanut Butter Topping

  • 2/3 cup Peanut Butter
  • 4 tbs melted Coconut Oil
  • 4 tbs Maple Syrup
  • Pinch salt (if PB is unsalted)


  1. Add the strawberries to a saucepan over medium heat.
  2. Cook until the strawberries break down and become liquidly, about 5 to 10 minutes, stirring occasionally.
  3. Mash the fruit to a pulp with the back of a spatula or potato masher. You can choose if you prefer it smooth or chunky.
  4. Remove pan from the heat, and stir in the maple syrup. Taste, and add more if needed.
  5. Add the chia seeds, and stir all to combine.
  6. Let it stand for 5-10 minutes, or until thickened.
  7. Once Chia jam has thickened, spoon mixture into your cup moulds.
  8. Mix all peanut butter topping ingredients well.
  9. Spoon mixture in moulds over the chia jam. Place in fridge to set. Can be kept frozen and thawed out. Consume within 5 days (if they last that long).
